Is manual sales a different objective in the interface?

No, it is the Sales objective with automation left off. You will not find a manual option in the objective list; the choice appears afterwards, in how much of targeting, placement, and creative selection you hand to Advantage+. Guides use the phrase to distinguish the two setups, not to name a separate objective.

How many ad sets should a manual sales campaign have?

Fewer than most accounts run. Each ad set needs its own conversion volume to leave learning, so splitting a limited number of weekly purchases across several audiences produces several stalled ad sets rather than one healthy one. Consolidate first, and add segmentation only where the exclusion or budget separation genuinely matters.

Can I mix manual and automated sales campaigns?

Yes, and many accounts do. Keep the manual campaign narrow and purposeful, such as retargeting or one product line, rather than a broad duplicate, because both compete in the same auction for the same people. Read total account results, since the two will trade attributed conversions between them.
